Yummy pumpkin pie (squash?)

Okay, so on my son's request I bought him some pumpkins or squash. I'm not sure which because it said "pie pumpkins" but they look like squash. Since the pumpkin is a squash, who knows. Anyway, I baked them then shelled and removed the seeds. I mashed the meat up with whole milk, 1 egg, cinnamon, nutmeg, cloves, ginger, and salt. I added some splenda and unsweetened coconut flakes. I then made the crust with unsweetened coconut flakes and butter and toasted it in the oven. I added the pumpkin mixture and baked it at 350 degrees for 45 minutes.

OMG. It is good and it is low carb. I'm not sure how low carb, but there are only 2 carbs per serving in the coconut, 2 carbs in a 1/2 cup of pumpkin, and 1 carb in a serving of splenda. I'm sure the milk has some so we'll add a carb per serving for the milk. The egg has some, but since there is 1 egg and about 6 servings of pie then it is miniscule like the milk.

So, we're talking about 5 carbs per serving if I'm calculating it right. It's very filling, too, which tells me a lot of the carbs are actually fiber. I don't do the net carb thing so it really doesn't matter, but still. Yum!

Can't wait to get rid of that mole!



That's right. I've never liked the mole so it's got to go. I don't think insurance will take care of it so I'll have to save up. I wonder how much it costs. It's got to go. I think it grew bigger when I gained weight and now that I've lost weight it's still there! ACK!


I lost another two pounds on the Kimkins plan. That's two great support groups I belong to and the people are incredible.

no diabetes blood sugar 90,
sodium potassium, liver normal.

Got a sweet tooth?

Here's a treat!

1 8 oz package of cream cheese, softened.
1/4 cup of heavy cream
1/2 cup splenda
teaspoon of lemon juice
dash of cinnamon
dash of ginger
dash of nutmeg
dash of cloves

mix it until it's smooth. eat it cold or fry it like a pancake in butter. mmmmmm

carb count is very low if you don't eat the whole thing. fat count is pretty high, but who's counting ;-)

Still at the same weight!

Okay, now this is extremely annoying. I went on M&E yesterday and this morning I'm still at the same darn weight. I even excercised a bit more, too. I'm in a time crunch and I really need to lose. M&E keeps me full and I know it works so it's just a matter of time.

I do have a theory on why stalls happen. I think our bodies are trained at a specific weight. A think if a person who weighs 120 goes up to 180 and stays there for a number of years and then goes up to 200 for a year or two, loses, then goes up to 220, loses to 200 then goes up to 250 will have an equal amount of problems when he or she reaches the weights stalled when gaining or when yo-yo dieting. I was at my specific weight for years before I lost and/or gained so now I'm having a hard time losing it. People who gain weight to more than what they weighed before have an easy time losing and then stall out somewhere and then eventually lose again until they hit a plateau where they gained before.

Does anyone want to try the experiment with me? All it is is charting. I wonder what would happen with lab mice. LOL.

Still hanging around

Well, I've been hanging around the same weight for about a month now. This one step is such a major goal for me, but I am stuck here. I'm going through high blood sugar tests, too. My mom has diabetes and she did a blood test on me. It was high and considering that I didn't eat any sugars that day, it was really high. So my adorable doctor poked me with a needle and took some blood samples. I guess I'll find out soon. I hope soon because I just want to get on with this!

Okay, it's nothing to sneeze at, yes I've lost 65 pounds in a relatively short amount of time so I shouldn't be complaining. I'm just so tired of being this way. Every time I have a child it takes me a lot of motivation to get moving. My last one was five years ago and I'm done :-) but it took me four years to get moving again. I was thin before I had him but all the yucky carbs they make you eat when you're pregnant just make me balloon up like the GoodYear blimp. Thank goodness I'm having no more! I love them dearly, but I'm done.

Someone gave me one of those Fitness Flyer excercise machines. It works up a good sweat for me right now. I suppose it will eventually stop working so well once I build my muscle back up. The muscle will help my knees. I had some pretty bad falls on my knees over the years and then with the weight gain I had, it broke them down. Now I'm ordered to build up the muscle and lose weight or sit for the rest of my life. Well, hey, I'd rather enjoy walking- you know?

Another pound, another day

Woo hoo! Ever since I started taking 3 tablespoons of coconut oil in my "desert" protein shake, I've been losing like crazy. :-) It took a week or two to kick in, but I decided I have to have coconut oil and it's gross alone, there's not enough in straight coconut milk, and it's gross in coffee. So, I started drinking protein shakes between meals and mixing coconut oil in them. Sure, it's got a strange texture, but yum! I'm losing like a pound a day.

Coconut oil is great to cook with. It has a wonderful flavor and I've found that it doesn't give the food a hard outside like olive oil or regular oil do. I'm not sure why that is since I know nothing about cooking. When I cook in olive oil and veg oil (blech) my chicken always comes out too hard. When I fry it in coconut oil, it has this wonderfully smooth texture and is still moist inside..

Anyway, another pound, another day! Woo hoo! When I go to RT next year and when I go to SFO in October for the horror conference, I'll be skinny minnie. If I get to go.
